Recipe of the Week: Hunan Onion Cakes

Are you looking for a new way to eat tortillas? Try this yummy — and quick — side dish!

16 flour tortillas
1 cup scallions, finely chopped
Salt, to taste
6 tablespoons sesame oil
2 eggs, beaten
4-6 cups peanut oil

1) Brush one side of a tortilla with sesame oil — do not go all the way to the edge of the tortilla. Cover with 1-2 tablespoons of scallions and sprinkle with salt. Brush egg on one side of a second tortilla — cover the entire side of the tortilla. Place egg-side-down on top of the other. Push on the edges to seal.

2) Heat peanut oil in a flat skillet to roughly 375ºF. Cook the cake until slightly brown, then flip and brown the other side. Keep an eye on the cooking process, it happens quickly. Drain on a paper towel.

3) Cut into small slices and serve.
